🍽️ Greek Moussaka

A layered dish of eggplant, lamb ragù, and fluffy béchamel with a golden crust.
Ingredients:
• 500 g ground lamb
• 2 large eggplants
• 1 onion, 2 garlic cloves
• 400 g canned tomatoes, 2 tbsp tomato paste
• cinnamon, nutmeg, salt, pepper
• For béchamel: 50 g butter, 3 tbsp flour, 500 ml milk, 1 egg, 100 g cheese
Preparation:
- Slice eggplants into 1 cm rounds, salt, let sit 20 min, then fry
- Brown meat with onion and garlic, add tomatoes, paste, spices, simmer 15 min
- Béchamel: melt butter + flour, whisk in milk until thick, stir in egg and cheese
- Assembly: eggplant → meat → eggplant → béchamel + cheese on top
- 180°C, 40–45 min. Rest 10 min
💡 Moussaka was invented in the 1920s by French chef Nikolaos Tselementes in Cairo—marrying béchamel with Arab layering and Greek eggplant.

🍽️ Cuban Ropa Vieja

“Old clothes”—shredded beef in a fragrant pepper sauce. Cuba’s national dish.
Ingredients:
• 700 g beef shoulder
• 2 bell peppers (red + green)
• 1 onion, 3 garlic cloves
• 400 g tomatoes, 2 tbsp tomato paste
• 1 cup broth
• cumin, paprika, oregano, bay leaf
Preparation:
- Sear whole cut until browned, cover with broth, braise 2–2.5 hours
- Shred with two forks
- Sauté onion and peppers (7–8 min), add garlic
- Stir in tomatoes, paste, spices
- Return meat to sauce, simmer 30–40 min. Optional: olives and capers
💡 The dish hails from medieval Castile. In 2019, ropa vieja became a UNESCO-recognized symbol of Cuban cuisine. Cubans say: “It’s the only old clothes we never throw away.”
